Radicchio & Blackberry Salad with Goats Cheese.

A truly simple salad that takes minutes (single digit minutes) to prepare and put together and is very delicious. This salad works so well because it does a lot with very little. Each ingredient is the MVP in this game. Sweet, juicy blackberries and the syrupy molasses get along SO WELL with the bitter radicchio and the salty goat’s cheese. 

The radicchio could be substituted with another bitter chicory style leaf, witlof, endive, treviso. You could swap the goats’ cheese for a creamy feta. For this lunch we used a vegan persian feta. Blackberries for mulberries, just see what you can find. 

 
 
 

Ingredients:

1 head of radicchio

1 punnet of blackberries (about 8-12)

¼ cup goats cheese, crumbled

1 tablespoon of pomegranate molasses

1 tablespoon of olive oil

A small handful of sprouts, optional

Method.

 

Step 1.

Wash and prepare all of your veg and fruit. 

Step 2.

Layer your radicchio onto a plate, top with blackberries and goats cheese. I like to throw over some herbs like dill, mint or basil, or some little sprouts (as pictured). 

Step 3.

Think about your placement like you are making little radicchio burritos, you want to be able to wrap a couple up around some blackberries, goats cheese and sprouts, use it to scoop up any pomegranate molasses from the bottom of the bowl and bite into it. 

Step 4.

Drizzle over oil and molasses. Enjoy!
